1. Preheat oven to 325°F (163°C). Line 2 large baking sheets with parchment paper or silicone baking mats. Set aside.
2. Combine all of the ingredients into a large bowl of a stand mixer (or use a hand mixer). Mix until all of the ingredients are combined. The dough is thick and heavy.
3. Using a 1/4 cup measuring cup, portion 1/4 cup mounds of cookie dough onto prepared cookie sheet. Use the back of a spoon to slightly flatten out into a cookie shape. (The cookies will not spread in the oven.)
4. Bake for 16-18 minutes or until the edges are slightly brown. Cool cookies on the baking sheets for 10 minutes, then transfer to a wire rack to cool completely.

1. Prepare: Preheat oven to 350ºF. Line two baking sheets with parchment paper. Set aside
2. Mix Dry Ingredients: In the bowl of a food processor, pulse 1 cup oats into a fine powder for 45-60 seconds. Add flax meal, arrowroot starch, salt and cinnamon and pulse a couple of times to combine. Pour into a large bowl and add remaining 1 cup of oats. Stir together to combine. Set aside
3. Blend Wet Ingredients: In the now empty bowl of the food processor, purée the eggs, honey (or maple syrup), applesauce (or apple butter), melted coconut oil, and vanilla together until smooth. Add wet ingredients to dry ingredients and stir together just until all dry ingredients are fully incorporated. Stir in dried fruit
4. Bake: With a ¼ cup measuring cup, scoop out cookie dough and place on the prepared cookie sheet, 5 cookies per sheet. Bake in 350ºF preheated oven for 15 minutes, rotating cookie sheets halfway through baking. Remove from oven and allow to cool on cookie sheets
